Low Carb Low Cal Egg Salad Wrap

Low carb, low cal egg salad wraps. The trick is to use 4 yolks instead of 6, and to chop half the eggs in one direction and slice the other half horizontal. This gives texture and volume!

Ingredients

For 2 Person(s)

Egg Salad

6 hard boiled eggs
2 tablespoons hummus
1 tablespoon mustard (dijon or whole grain)
1 teaspoon herbs (tarragon or dill works great)
1 dash salt and pepper
tortillas

Low Carb Low Cal Egg Salad Wrap Directions

  1. "Dry Fry" your tortillas on a cast iron or grill pan (see notes below). 
  2. Before you chop half the eggs in both directions and slice the other half horizontally, cut the eggs in half and toss out two of the yolks for reduced calories if you are watching your diet
  3. Chop half the eggs horizontally and vertically (or use egg slicer for ease) and slice the other half horizontal only, This gives texture and volume!
  4. Add the rest of the ingredients, and stir to combine.
  5. Put some arugula or spinach on your dry fried tortilla and add some egg salad.
  6. Fold the short sides in a little (the left and right side of the tortilla) and then fold up from bottom into a wrap
  7. Enjoy!

Recipe notes

Chopping half the eggs in one direction and slicing the other half horizontal gives texture and volume.

Adding some arugua or spinach to your wrap adds crunch without guilt

Dry frying your tortilla (on the stove in a grill pan or cast iron with no oil) adds color and texture!
